For New Year’s
Eve on Kwajalein, we decided to continue our fondue tradition that we started
last year with the boys, and my husband made two delicious cheese and chocolate
fondues with all kinds of veggies, fruits, homemade chicken nuggets, pretzels,
marshmallows, and the like to dip in the appropriate melting pot. The favorite for all of us was the bacon
dipped in chocolate. Who would have thought that would be such a delicious
concoction, but it truly was!! After that, we read our letters of hopes and
predictions written exactly one year ago, and then we started a new tradition
of attending the Kwajalein Running Club’s New Year’s Eve walk. The goal was to
leave for your walk anytime between 11 and 11:30 and make it back the closest
to midnight for a prize. My boys decided to go on ahead of us about halfway
through and made it to the finish line before the clock struck 12, but my
husband and I were walking the final stretch when we heard the cheers from
fiends at various outdoor parties going on in the neighborhood signaling the
New Year had begun. It was a perfect way
to start the year with trying out a new food and taking a walk around the
island, appreciating where we live and all we have been blessed with. I know I’m a bit late posting this one, but
happy 2013 everyone!
